ENERGIZING GREEN SMOOTHIE

Smoothies are a great way to get a power-packed pick me up!  This is one of my staples in the morning, or I pack it in my food carrier for an afternoon boost when my energy may be waning.  It's full of essential nutrients, power building amino acids, and toxin busting antioxidants.  Give it a try and let me know how you feel!!

Ingredients:

4 stalks of Lacinto kale
1/2 c. fresh pineapple
1/4 cucumber
2 tsp. chia seeds
2 Tbsp. avocado
1 c. coconut water
Ice

Method:

Soak chia seeds overnight in water (or at least 20 mins. before smoothie prep).  Add 3 cubes of ice to blender. Add remainder of ingredients and top with 3 more ice cubes.  Sometimes I add a dash of agave syrup for some sweetness.  Depending on the strength of your blender, you may need to add more water to get the ingredients to blend properly, or stop during blend to stir with a spoon.  Blend until smooth.  This makes 2  servings.  Share one or seal it up in a mason jar for later in the day!
